Ingredients

  • ¼ teaspoon salt
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes (yellow and red), halved
  • ½ can artichoke hearts, sliced
  • 6 slices bacon, cooked, drained, and chopped (optional)
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chicken breasts in a casserole dish.
  3. Sprinkle dried basil and salt evenly over the chicken.
  4. Layer sliced zucchini, cherry tomatoes, and artichoke hearts on top.
  5. Sprinkle with chopped bacon (if using).
  6. Top everything with shredded mozzarella cheese.
  7. Bake for 20–30 minutes, depending on the thickness of the chicken, until fully cooked through.
  8. Remove from the oven and let rest in the casserole dish for 10–15 minutes to finish cooking and retain juices.
