- 4 chicken breasts
- 1 tablespoon dried basil
- ¼ teaspoon salt
- 1 zucchini, sliced
- 1 cup cherry tomatoes (yellow and red), halved
- ½ can artichoke hearts, sliced
- 6 slices bacon, cooked, drained, and chopped (optional)
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Place chicken breasts in a casserole dish.
- Sprinkle dried basil and salt evenly over the chicken.
- Layer sliced zucchini, cherry tomatoes, and artichoke hearts on top.
- Sprinkle with chopped bacon (if using).
- Top everything with shredded mozzarella cheese.
- Bake for 20–30 minutes, depending on the thickness of the chicken, until fully cooked through.
- Remove from the oven and let rest in the casserole dish for 10–15 minutes to finish cooking and retain juices.
Notes
- If chicken breasts are very thick, slice them in half lengthwise for even cooking.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat in a 350°F oven for 20 minutes or microwave for about 1 minute.
