Description

A delicious and healthy dish featuring roasted butternut squash stuffed with savory apple sausage.


Ingredients

  • 1 medium butternut squash
  • 2 cups apple sausage, crumbled
  • 1 cup cooked quinoa
  • 1/2 cup diced apples
  • 1/4 cup diced onions
  • 1/4 cup chopped walnuts
  • 1 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Place the squash halves on a baking sheet and roast for 30-35 minutes until tender.
  4. In a skillet, cook the apple sausage until browned.
  5. Add diced apples, onions, walnuts, and spices to the sausage and cook for an additional 5 minutes.
  6. Mix in the cooked quinoa and stir well.
  7. Scoop the sausage mixture into the roasted butternut squash halves.
  8. Return to the oven for another 10 minutes.
  9. Serve warm and enjoy.

  • Feel free to use any type of sausage.
  • Can be made vegetarian by using plant-based sausage.
