A delicious and healthy dish featuring roasted butternut squash stuffed with savory apple sausage.
Ingredients

- 1 medium butternut squash
- 2 cups apple sausage, crumbled
- 1 cup cooked quinoa
- 1/2 cup diced apples
- 1/4 cup diced onions
- 1/4 cup chopped walnuts
- 1 tsp cinnamon
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise and scoop out the seeds.
- Place the squash halves on a baking sheet and roast for 30-35 minutes until tender.
- In a skillet, cook the apple sausage until browned.
- Add diced apples, onions, walnuts, and spices to the sausage and cook for an additional 5 minutes.
- Mix in the cooked quinoa and stir well.
- Scoop the sausage mixture into the roasted butternut squash halves.
- Return to the oven for another 10 minutes.
- Serve warm and enjoy.
Notes
- Feel free to use any type of sausage.
- Can be made vegetarian by using plant-based sausage.
- Store leftovers in the refrigerator for up to 3 days.
