Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, combine the pumpkin puree, diced apple, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- In a small bowl, combine the rolled oats and melted butter to create the streusel topping.
- Divide the muffin batter evenly among the muffin cups and sprinkle the streusel topping on each muffin.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.

- For added flavor, consider adding chopped nuts or chocolate chips to the batter.
