Description

Ingredients

  • 1/2 cup pumpkin puree
  • 1/2 cup apple, diced
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder

  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup rolled oats
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, diced apple, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, combine the rolled oats and melted butter to create the streusel topping.
  6. Divide the muffin batter evenly among the muffin cups and sprinkle the streusel topping on each muffin.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
