- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup apple, diced
- 1/3 cup sugar
- 1/4 cup brown sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/4 cup vegetable oil
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 cup rolled oats
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the pumpkin puree, vegetable oil, egg, and vanilla extract.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the diced apple and optional nuts.
- Divide the batter evenly among the muffin cups.
- In a small bowl, mix the rolled oats with a little brown sugar and sprinkle on top of the muffins.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
- Store leftovers in an airtight container for up to 3 days.
- These muffins can be frozen for up to 2 months.
- Feel free to add spices like ginger or cloves for extra flavor.
