Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix the Greek yogurt, brown sugar, eggs, and vanilla extract until smooth.
  4. Add the wet mixture to the dry ingredients and gently fold until just combined.
  5. Fold in the diced apples evenly.
  6. Divide the batter into a muffin tin, filling each cup about three-quarters full.
  7. Bake for 18–22 minutes, until a toothpick inserted in the center comes out clean.
