Ingredients
- All-purpose flour: 2 cups (240 g)
- Apples: 1½ cups, peeled and diced (about 2 medium apples)
- Greek yogurt: 1 cup (240 g)
- Brown sugar: ¾ cup (150 g), packed
- Ground cinnamon: 1 teaspoon
- Baking powder: 2 teaspoons
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- Salt: ½ teaspoon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
- In another bowl, mix the Greek yogurt, brown sugar, eggs, and vanilla extract until smooth.
- Add the wet mixture to the dry ingredients and gently fold until just combined.
- Fold in the diced apples evenly.
- Divide the batter into a muffin tin, filling each cup about three-quarters full.
- Bake for 18–22 minutes, until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
