Ingredients

  • 1 cup granulated sugar
  • 1 egg, room temperature
  • ¼ teaspoon salt
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ½ teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • ¼ cup sanding sugar (for rolling)

Instructions

  1. In a large bowl, beat shortening, sugar, and egg with an electric mixer for 3–4 minutes until creamy. Mix in the boiled apple cider until fully blended.
  2. In a separate bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and allspice.
  3. Gradually add the dry ingredients to the wet mixture on low speed. Mix until just combined.
  4. Cover the dough and refrigerate for 1 hour.
  5. Preheat to 375°F (190°C) and line baking sheets with parchment paper.
  6. Form tablespoon-sized balls and roll each in sanding sugar. Place 2 inches apart on the baking sheet.
  7. Bake for 9–11 minutes, depending on how crisp you like the edges.
  8. Transfer to a wire rack to cool completely. Store in an airtight container up to 5 days.

  • Bring egg and shortening to room temperature for smoother mixing.
  • To make boiled apple cider: simmer apple cider uncovered until reduced to ¼ of its original volume.
  • Chilling prevents excess spreading and keeps the cookies thick and soft.
