- ⅓ cup boiled apple cider (concentrated)
- ½ cup shortening, room temperature
- 1 cup granulated sugar
- 1 egg, room temperature
- ¼ teaspoon salt
- ¼ teaspoon ground cloves
- ¼ teaspoon allspice
- ½ teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1 teaspoon baking soda
- 2 cups all-purpose flour
- ¼ cup sanding sugar (for rolling)
Instructions
- In a large bowl, beat shortening, sugar, and egg with an electric mixer for 3–4 minutes until creamy. Mix in the boiled apple cider until fully blended.
- In a separate bowl, whisk together flour, baking soda, salt, cinnamon, ginger, cloves, and allspice.
- Gradually add the dry ingredients to the wet mixture on low speed. Mix until just combined.
- Cover the dough and refrigerate for 1 hour.
- Preheat to 375°F (190°C) and line baking sheets with parchment paper.
- Form tablespoon-sized balls and roll each in sanding sugar. Place 2 inches apart on the baking sheet.
- Bake for 9–11 minutes, depending on how crisp you like the edges.
- Transfer to a wire rack to cool completely. Store in an airtight container up to 5 days.
Notes
- Bring egg and shortening to room temperature for smoother mixing.
- To make boiled apple cider: simmer apple cider uncovered until reduced to ¼ of its original volume.
- Chilling prevents excess spreading and keeps the cookies thick and soft.
- Use a scoop for even sizing and baking.
