Description

Delicious apple butter thumbprint cookies with a sweet and warm flavor.


Ingredients

  • 1 cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon cinnamon
  • ½ cup apple butter

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Beat butter and sugar for 2–3 minutes until well combined. Add egg yolks and vanilla; beat 1–2 minutes more until light and fluffy.
  3. Mix flour and salt in a separate bowl. Add to the butter mixture 1 cup at a time, mixing on low just until combined.
  4. Cover and refrigerate for 30 minutes.
  5. Scoop dough into balls. Mix cinnamon and sugar in a bowl. Roll each dough ball in the mixture and place on baking sheets 1 inch apart. Press a thumbprint into each and fill with a small spoonful of apple butter.
  6. Bake for 12–14 minutes until edges and bottoms are lightly golden. Cool on a wire rack.
  7. Let cool completely before eating (the filling stays hot). Store at room temperature up to 3 days.
