Delicious apple butter thumbprint cookies with a sweet and warm flavor.

- 1 cup unsalted butter, room temperature
- ½ cup granulated sugar
- 2 egg yolks
- 1 teaspoon vanilla extract
- 2¼ cups all-purpose flour
- ½ teaspoon salt
- ¼ cup granulated sugar (for rolling)
- 1 teaspoon cinnamon
- ½ cup apple butter
Instructions
- Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
- Beat butter and sugar for 2–3 minutes until well combined. Add egg yolks and vanilla; beat 1–2 minutes more until light and fluffy.
- Mix flour and salt in a separate bowl. Add to the butter mixture 1 cup at a time, mixing on low just until combined.
- Cover and refrigerate for 30 minutes.
- Scoop dough into balls. Mix cinnamon and sugar in a bowl. Roll each dough ball in the mixture and place on baking sheets 1 inch apart. Press a thumbprint into each and fill with a small spoonful of apple butter.
- Bake for 12–14 minutes until edges and bottoms are lightly golden. Cool on a wire rack.
- Let cool completely before eating (the filling stays hot). Store at room temperature up to 3 days.
Notes
- Avoid overfilling with apple butter to prevent spilling during baking.
- These cookies taste even better the next day as flavors settle.
