This Amazing Manicotti Recipe features pasta filled with a creamy cheese mixture topped with a flavorful tomato sauce.

- 10–12 manicotti noodles, cooked al dente
- 6 tbsp olive oil
- 1 large garlic clove, minced
- 1 medium onion, minced
- 2 tbsp dried parsley
- 2 (15 oz) cans diced tomatoes
- 2 (8 oz) cans tomato sauce
- ½ tsp dried basil
- 1 tsp salt
- Dash of black pepper
- 15 oz ricotta cheese
- ¼ lb mozzarella cheese, grated (about 1 cup)
- 3 tbsp Parmesan cheese
- 1 egg
- 1 tbsp dried parsley
- 2 tsp sugar
- ½ tsp salt
- ⅛ tsp black pepper
- Additional Parmesan cheese for topping
Instructions
- Cook manicotti noodles al dente according to package directions. Drain and lay flat without overlapping.
- Heat olive oil in a large pot. Sauté onion, garlic, and parsley until fragrant and onion is translucent.
- Add diced tomatoes, tomato sauce, basil, salt, and pepper. Simmer uncovered for 25–30 minutes until thickened.
- In a bowl, mix all filling ingredients until well combined.
- Spread half the sauce in a 9×13 baking dish.
- Fill each noodle with the cheese mixture and place over the sauce.
- Pour remaining sauce over the noodles.
- Cover with foil and bake at 400°F for 40 minutes.
- Remove foil, sprinkle with Parmesan, and bake 5 more minutes.
- Serve hot.
Notes
- Let rest 5–10 minutes before serving for easier slicing.
- Can be assembled ahead and refrigerated before baking.
- Pairs well with salad or steamed vegetables.
