Almond Joy Coconut Bites
Ingredients
2 cups sweetened shredded coconut
1/2 cup powdered sugar
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
16 whole almonds (unsalted)
1 cup dark or milk chocolate chips
Instructions
Prepare Coconut Mixture: In a bowl, combine shredded coconut, powdered sugar, melted coconut oil, vanilla extract, and salt. Stir until everything is well mixed.
Form the Bites: Take a spoonful of the coconut mixture and form it into a small ball. Flatten it slightly and press an almond into the center of each coconut ball. Repeat for all bites.
Chill: Place the coconut-almond balls onto a baking sheet lined with parchment paper. Chill them in the fridge for at least 30 minutes to firm up.
Melt the Chocolate: While the bites chill, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth.
Dip the Bites: Once the coconut bites are chilled, dip each one into the melted chocolate, covering it completely. Return to the parchment paper and let the chocolate set.
Chill Again: Place the chocolate-coated coconut bites back in the fridge for another 15–20 minutes, or until the chocolate is fully hardened.
