Ingredients

  • pound ground turkey
  • 1 large egg, lightly beaten
  • ½ onion, finely chopped
  • ¼ cup almond flour
  • 4 garlic cloves, minced
  • 1 ½ teaspoons finely chopped fresh rosemary
  • 1 ½ teaspoons finely chopped fresh thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 3 tablespoons extra-virgin olive oil
  • 1 cup chicken broth
  • ¼ cup Dijon mustard
  • ¼ cup maple syrup
  • 2 tablespoons mayonnaise
  • extra fresh rosemary and thyme for garnish

Instructions

  1. Make turkey mixture. In a large bowl, combine turkey, egg, onion, almond flour, garlic, rosemary, thyme, salt, and pepper. Mix until combined.
  2. Form meatballs. Measure 1 1⁄2 tablespoons of mixture and roll into approximately 30 meatballs. Place on a plate.
  3. Pan sear meatballs. Heat 2 tablespoons of oil in a large pan on medium heat. Add half of the meatballs and brown on all sides, about 5 to 8 minutes. Remove cooked meatballs and repeat with remaining meatballs.
  4. Make the sauce. Deglaze the pan with chicken broth, scraping up bits. Add Dijon mustard, maple syrup, and mayonnaise. Whisk and simmer until creamy.
  5. Serve. Add meatballs back to the pan to warm through. Garnish with chopped herbs before serving.

Notes

  • These meatballs can be made ahead and reheated.
  • Adjust seasoning to taste.
