10 Minute Peanut Sauce Rice Noodles: 5 Ways to Energize Dinner

Description

A quick and easy recipe for a flavorful peanut sauce to mix with rice noodles.


Ingredients

Scale
  • 150 grams rice noodles
  • salt (optional)
  • 4 tbsp peanut butter
  • 2 small cloves of garlic
  • 1 tbsp light soy sauce
  • 1 tbsp sriracha
  • 1/2 tbsp lemon juice
  • 1 tbsp honey
  • 5 tbsp water
  • 1/2 tbsp sesame oil (optional)
  • sesame seeds (for topping)
  • spring onions (for topping)
  • crushed peanuts (for topping)

Instructions

  1. Boil the rice noodles as per package instructions.
  2. While the noodles are boiling, add all sauce ingredients to a blender and mix until a smooth sauce is ready.
  3. Pour the peanut sauce over the cooked noodles and mix well.
  4. Serve at room temperature or cold, or heat for about a minute or two on medium flame.
  5. Add more water if needed.
  6. Transfer to serving bowls and top with sesame seeds or spring onions before serving.
